Zero-Waste Juice Pulp Crackers

Ingredients
1 1/2 cup juice pulp
1/3 cup chia seeds
1 cup water
1/2 cup ground flax meal
2 tbs moringa powder
2 tbs avocado seed powder
1 tbs nutritional yeast
4 tbs pumpkin seed oil
1/4 cup pumpkin seeds
pinch of salt
Directions
- Keep the veggie pulp after you juice your selected veggies.
- In a small bowl, combine the chia seeds and water. Stir until the chia seeds are no longer clumping together. Let this sit for 5 minutes before incorporating.
- In a mixing bowl, add the juice pulp, flax meal, moringa powder, avocado seed powder, nutritional yeast, pumpkin seeds & oil, and pinch of salt.
- Mix the chia seed water into your ingredients bowl. Mix until all ingredients are homogenous or resemble a batter.
- Pre-heat oven to 350 degree Fahrenheit
- Cover a baking sheet with parchment paper. Spread out the juice pulp batter onto the parchment paper.
- Place a second layer of parchment paper on top of the batter.
- Use a rolling pin to roll out the batter as thin as possible.
- Remove the top layer of the parchment paper.
- Place juice pulp batter in the oven for 20 minutes.
- Remove the juice pulp batter after 20 minutes and flip the batter so the bottom side is now on the top.
- Bake for additional 15 minutes.
- Remove from oven and cut out cracker shapes while hot.
- Let cool before serving.
Notes
- Ideal veggies to juice are: celery, apple, spinach, beets, cucumber, carrots, ginger and turmeric.
