This is one simple recipe I’m labeling as a “must-try”. As a vegan, I usually cannot order pretzels anywhere. Baseball games, movies, restaurants …. you name it. Most pretzels are made with milk and butter. But not these ones! A few simple ingredients and viola! You’ll have pretzel bus in no time. And trust me, once you make these once, you’ll make them a hundred times.
The difference between pretzel buns & regular buns
The differences is in the water!
Water:
- Pretzel buns: Similar to regular buns in basic ingredients, but water is only used when boiling the dough. It’s not used in the dough ingredients itself. The boiling water combined with baking soda and sugar is what gives pretzel buns their distinct sweet taste.
- Regular buns: Water is typically used in the dough and does not call for boiling before baking.

How to make vegan pretzel buns

- Knead the dough: Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Add more flour if needed to prevent sticking.
- First rise: Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Shape the buns: Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, about 12 inches long. Shape the ropes into pretzels by crossing the ends over each other, then bringing them down and tucking them under the bottom curve.

1 1/8 tsp instant yeast
1/8 cup water
1 1/2 tbs coconut sugar
3/4 cup of unsweetened dairy-free milk
2 tbs vegan butter (melted)
1 tsp salt
- Water Bath:
8 cups of boiling water
2 tbs sugar
1/4 cup baking soda
- Pretzel Bun Glaze:
4 tbs vegan butter (melted)
1-2 tbs maple syrup
Coarse sea salt
Directions
- In a small bowl, combine the yeast with lukewarm water and sugar. Let it sit for 5 minutes until foamy and activated.
- In a large bowl, whisk together the flour and salt. Add the melted vegan butter and yeast mixture, then mix until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic.
- First rise: Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
- Shape the buns: Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a ball, about the size of a golf ball.
- Pretzel bath: In a large pot, add the water and sugar. Bring the water to a boil. When ready add the baking soda to the boiling water.
– Watch out, this will make the water fizz up when the baking soda gets added. - Preheat your oven to 400°F. Grease a baking tray or use parchment paper.
- Carefully dip each bun into the boiling water for 30 seconds, then transfer them back to the baking sheet.
– Make sure to submerge the buns or rotate half way through. - Sweet Butter Glaze: mix together the butter and sugar. Glaze each bun generously.
