I’m so excited that you’re back for more! More greens, more vegetables, more healthy choices, more nutrition and more deliciousness. We’re adding more of it all! Especially when it comes to this sautéed shaved brussels sprouts green salad. Yes, brussels sprouts is spelt with an “s” at the end of brussels; it’s not a typo. But it is a silent “s”, so don’t worry you’ve beens saying it correctly.

Let’s dive into a salad that’s more than just greens. This isn’t your “salads don’t suck” or “not your average” green salad. It’s a salad sensation and It’s even better. Like most of my recipes, this meal is packed with nutrients. And yes I said meal instead of salad. This salad has enough vegetables, protein and nutrients to be a full meal on it’s own. So let’s dive into this uber green salad that will have you feeling energized and satisfied within a few bites.

I shaved these brussels sprouts with my Breville Sous Chef Pro Food Processor to make things really easy. You can cut and chop these one by one, but if you have a food processor this will save you loads of time and hand cramping.

Once my brussels sprouts were shaved, I threw them in a nonstick pan with 2 tbs olive oil and a pinch of salt. I sautéed these on medium heat for roughly 5-8 minutes. I wanted the reduce the bitter and stiffness of the sprouts as well as gets some golden brown color on them to add a bit of a charred flavor profile. This is the majority of cooking for this meal, the rest of the steps are prep for the salad additions. The brussels sprouts are the only ingredient to be cooked for this dish. But if you like a raw shaved brussels sprout salad, you can always skip this step and keep the sprouts raw. I would still recommend shaving them.

  • Brussels sprouts
  • Carrington Farms organic pumpkin seed oil
  • Sun-dried tomatoes
  • Purple and green frisee lettuce
  • Roasted chickpeas
  • Vegan caesar dressing (w/ a cilantro chutney addition)
  • Shredded carrots
  • Alfala sprouts
  • Pistachios
  • Almond slices
  • Lemon zest

This salad isn’t just a side dish, it’s a satisfying meal in itself. Packed with protein, vegetables, and all the good stuff, it’ll leave you energized and happy.

Ingredients

  • 1 pack brussels sprouts

  • 1 tbs Carrington Farms organic pumpkin seed oil

  • Handful Sun-dried tomatoes

  • Handful purple and green frisee lettuce

  • 1/2 cup Roasted chickpeas

  • 2 tbs vegan caesar dressing (w/ a cilantro chutney addition)

  • Handful shredded carrots

  • Handful alfala sprouts

  • Sprinkle pistachios

  • Sprinkle almond slices

  • Lemon zest

Directions

  • Wash, rinse and pat dry the brussels sprouts.
  • Shave the brussels sprouts either in a food processor or by hand cutting.
  • Heat up a nonstick pan to medium heat and add a tablespoon of olive oil.
  • Add the shaved brussels sprouts to the hot pan and sautee for 5 minutes.
  • At 5 minutes add 2 tsp of vegan butter and stir the brussels sprouts until all the butter is melted and mixed in.
  • Sauté until the sprouts start to char a little bit.
  • Remove from heat and set aside to cool to room temperature.
  • Slice or dice a handful of sun-dried tomatoes.
  • Roughly chop a large handful of frisee lettuce leaves.

  • In a large mixing bowl, add all the ingredients together.
  • Plate the mixed salad into a serving bowl.
  • Top with vegan caesar dressing & enjoy!

Notes

  • A great addition to this salad is avocado!
  • You can use any type of lettuce you prefer. My top 3 recommendations for this recipe are endive lettuce, arugula and massaged kale.
  • Make the roasted chickpeas ahead of time. Also enjoy these as a healthy snack alternative.
  • Make a large batch of the vegan caesar salad dressing and use it on everything!
