Ugh, who even buys a whole head of cabbage anymore? Me, apparently. I was all gung-ho about adding more veggies to my diet, but surprise, surprise, it’s been chilling in the crisper drawer judging me ….. hard.

But hey, no veggie left behind! Let’s turn this into something delicious. Cabbage chips! Perfect for a healthy crunch.

All you need is cabbage, a little oil, Za’atar seasoning and some salt.

Health benefits of purple cabbage

Purple cabbage, also known as red cabbage, packs a nutritious punch! Here are some of its health benefits:

  • Reduced inflammation: Anthocyanins, the pigments giving it that vibrant color, have anti-inflammatory properties.
  • Heart health: These anthocyanins may also lower blood pressure and reduce the risk of heart disease.
  • Stronger bones: Purple cabbage is a good source of Vitamin K, essential for bone health.
  • Improved gut function: The fiber content in cabbage helps with digestion and may promote healthy gut bacteria.

On top of these, it’s low in calories and a great way to add antioxidants to your diet!

How to make cabbage chips

These baked chips are a delicious and healthy way to use up left-in-the-fridge-judging purple cabbage, or to add a vibrant twist to your snack routine.

Ingredients:

  • 1 head of purple cabbage
  • 2 tbs Za’atar seasoning
  • 1/4 cup olive oil
  • 1 tbs sea salt

Instructions:

  1. Wash and dry the purple cabbage. Remove the core and chop the cabbage leaves into chip or bite-sized pieces.
  2. In a large bowl, toss the cabbage slices with olive oil, Za’atar seasoning, and salt. You can also experiment with other seasonings like smoked paprika, garlic powder, or a sprinkle of nutritional yeast for a cheesy flavor.
  3. Massage the seasoning into the cabbage slices for 1-2 minutes, making sure all the slices are evening coated.
  4. Spread the seasoned cabbage slices in a single layer on an air fryer rack. Make sure they aren’t touching or overlapping too much, as this will affect how crispy they get.
  5. Set your air fryer to air fryer mode at 375°F (135°C).
  6. Bake for 15 minutes, flip the chips over half way through.
  7. Remove the chips from the oven and let them cool completely on a drying rack before storing serving.
